26 Jan Shrimp, mango and avocado tartare
A new flavor to try.
250gr. cheap shrimp.
3 tablespoons of chopped onion.
1 manila or ataulfo mango.
Salt, parsley and pepper.
For the dressing: wash, drain and finely chop the parsley. Mix it with ¼ cup of olive oil and the juice of one lemon, pepper and salt. This dressing will serve you for the shrimp, the avocado and to decorate the already assembled dish.
For the shrimp you can use Pacotilla Shrimp (it is already cooked and you can use the small size) or fresh.
If the shrimp is fresh, you will have to pass it through boiling water for 30 seconds, in cold water for 5 seconds and drain. Peel and chop the shrimp. Do not forget to separate a few without chopping for the decoration. Toss them with a couple of tablespoons of the dressing.
The avocado is diced, you mix it with a tablespoon of onion and a couple of tablespoons of the dressing. The mango is also diced.
Assemble the Tartare. First you put the chopped mango, in the middle the shrimp and finally the avocado. Garnish each serving with whole shrimp. Drizzle some of the dressing on top and serve immediately. Serve it with crackers.
